Spinach and Cheese Bourekas (Puff Pastry Triangles)

Buttery puff pastry filled with spinach and two types of cheese, Bourekas are a classic for a reason. These are a great finger food for parties or brunches and you can easily play around with different fillings.

Ingredients:
  • 500 grams puff pastry, defrosted in the fridge overnight
  • 70 grams mozzarella cheese, shredded
  • 70 grams feta cheese
  • 70 grams raw spinach, thoroughly washed and dried
  • 1 egg, lightly beaten
  • Sesame seeds, for sprinkling on top

Instructions:
  1. Finely chop the spinach and add to a medium sized bowl. Add the cheeses and mix well. At this point you can taste the filling and add salt if needed – I usually don’t add any, as feta cheese is very salty.
  2. On a lightly floured surface, roll the puff pastry out into a rectangle about 3 mm thick.
  3. Cut the dough into squares, whatever size you desire (a 10x10cm square will make a medium sized bourekas).
  4. Place the squares onto a lined baking sheet.
  5. Place a few tablespoons of the filling into the center of each square (this will depend on how large your cut your squares).
  6. Fold the squares along a diagonal, forming a triangle. Press down on the edges with a fork to make sure they are sealed well. Try to work quickly, as the puff pastry needs to stay cool. If at any point the dough becomes soft or difficult to work with, put it in the refrigerator for about 20 minutes.
  7. Place the unbaked bourekas in the fridge or freezer while your oven preheats.
  8. Heat oven to 190 Celsius / 375 Fahrenheit.
  9. Remove the bourekas from the fridge and brush with egg wash. Sprinkle sesame seeds on top.
  10. Bake for 15-20 minutes, or until golden brown. Check the bottoms of the bourekas to make sure the puff pastry is golden brown and fully cooked.
  11. Remove from oven and let cool for at least 15 minutes.
  12. Enjoy! Bourekas are best enjoyed fresh, but can be stored at room temperature for 1 day or frozen, and reheated gently in the oven.
Notes:
  • The filling can be replaced with any cheeses and herbs you like!
  • Unbaked bourekas can be frozen before the egg wash, and baked as usual whenever desired.
  • To make these bourekas gluten-free, use gluten free puff pastry.
