Olive Oil and Maple Granola

Healthier than store-bought, cheaper, and totally customizable (change the nuts, add dried fruit or coconut, adjust the sweetness to your preference). Homemade granola is easy to make and incredibly tasty.

Ingredients:

  • 4 cups rolled oats (about 500 grams). Use certified gluten-free oats for a gluten free granola.
  • 1/2 cup maple syrup or honey (about 140 grams)
  • 1/2 cup olive oil (about 80 grams)
  • 1 cup mixed nuts, roughly chopped (I like to use almonds and pecans)
  • 1 cup mixed seeds (I like to use sunflower, pumpkin and flax seeds)
  • 1 tsp salt (start with 1/2 tsp, and adjust to taste)

Instructions:

  1. Preheat oven to 160 Celsius / 320 Fahrenheit.
  2. In a large bowl, mix all the ingredients until combined. Taste and adjust salt or sweetness level, if desired.
  3. Spread evenly over a large baking sheet lined with parchment paper. Use a spatula or the bottom of a cup to press down firmly on the granola if you want more chunks.
  4. Bake for 15 minutes.
  5. Remove pan from oven, stir granola to ensure it bakes evenly. Press down again.
  6. Return to oven and bake for an additional 10 to 15 minutes, or until golden brown.
  7. Remove from oven and let cool completely. Place in airtight container.
  8. Enjoy! Granola will keep at room temperature for up to two weeks.
