Tender, buttery vanilla bean sable cookies. An easy, delicious one bowl slice and bake cookie made with the simplest ingredients.
Ingredients:
- 160 grams unsalted butter, at room temperature
- 80 grams powdered sugar (sometimes labeled confectioners sugar)
- 1 teaspoon vanilla bean paste (you can replace this with vanilla extract or the contents of 1 vanilla pod)
- 1/2 teaspoon salt
- 240 grams all-purpose flour
- Granulated sugar, for rolling
Instructions:
- In a large bowl, mix the softened butter, salt, powdered sugar, and vanilla paste until well combined.
- Add the flour and mix until a dough forms – it may seem dry, but will eventually come together.
- Divide the dough into two equal parts, and roll each one into a log about 3-4 cm wide.
- Wrap the logs in plastic wrap and refrigerate for an hour, or until firm enough to slice. (I like to keep these logs, wrapped, in an old paper towel roll to maintain their shape as they firm up),
- Heat your oven to 170 Celsius or 340 Fahrenheit.
- Spread sugar on a large plate or baking sheet, and roll each log in the sugar until it is fully coated.
- With a sharp knife, slice the logs into circles slightly less than 1 cm thick.
- Place on a lined baking sheet and bake for 10-15 minutes, or until they just start to get golden on the edges.
- Let cool completely. Enjoy! Cookies can be kept in an airtight container for a week.
